Karen Cartwright gives a traditional Mexican cocktail a pink twist

The addition of pink grapefruit makes this the perfect tequila cocktail for those that prefer something sweeter than the traditional margarita. Pink grapefruits are in abundance in Surrey Street Market right now.

Pink Paloma

Ingredients from the market:

1 pink grapefruit

1 lime

Ingredients from the drinks cabinet:

50ml tequila reposado or blanco (I used Patron)

Grapefruit soda (such as Ting, available in many of the shops on Church Street)

Method:

Pour the tequila into an ice-filled glass and squeeze in half of the pink grapefruit juice and half of the lime juice. Top with grapefruit soda, stir and garnish with pink grapefruit slices. Now all that remains is for you to fiesta with your Surrey Street treat!
